Pitted Apricot Jam with Orange for Winter

A treat with a bright, rich flavor — bottle up a little piece of summer! My sister likes to open a jar of apricot jam on some special day, but I think opening a jar of this fragrant treat is a celebration all by itself — don't you agree? The orange gives the jam an interesting note. A great recipe!

  • Before making the jam, wash the apricots, halve them and remove the pits, then cut them into cubes. Put them in a large pot, cover with the sugar, and leave to macerate overnight. In the morning, wash and peel the orange, remove the seeds, and purée it in a blender. Add it to the apricots, which will have released a lot of juice overnight. Set the pot over the heat and bring to a boil, then lower the heat and cook the apricots for 5 minutes — don't forget to stir! Let it rest for 5–6 hours. Repeat the process — bring to a boil, cook, and let it rest. On the third round, after 5 minutes of cooking, ladle the apricots into sterilized jars. Seal with sterile lids, turn them over, and wrap them in a blanket until completely cool. The jam is ready! Enjoy your tea on winter evenings!
