Walnut Salad with Smoked Chicken

A tasty, fragrant salad with a savory edge! A chicken-and-walnut salad always catches a cook's eye for its unusual flavor. In my version, I use smoked chicken. This hearty, appetizing salad won't leave anyone indifferent — give it a try!

  • Start by gathering your ingredients. Boil the eggs: cover them with water, bring to a boil, and cook for 5-7 minutes. Drain and cover with cold water so they cool faster. Peel and core the apple. Chop the walnuts a little with a sharp knife so they break down — I don't recommend a food chopper, which grinds them too fine to taste in the salad. Toast the chopped nuts in a dry skillet until fragrant, stirring constantly so they don't scorch. As soon as you turn off the heat, tip them onto a plate, since they'll keep cooking (and may burn) in the hot pan. To assemble: pull the smoked chicken off the bones, remove the skin, and cut the meat into small pieces. Put it in the salad bowl you'll be serving from. Add the apple grated on the coarse side of a box grater. Wash the cucumber, trim the ends, and cut it into medium cubes; add to the bowl. Use a hard cheese — it's easier to grate. Grate it coarsely and add it to the salad. Stir in a little mayonnaise. Chill the salad in the fridge. Before serving, transfer it to a pretty bowl. Enjoy! You can vary this salad by adding new ingredients each time — mushrooms, pineapple, corn. Always use fresh, good-quality ingredients. The salad doesn't keep long, so it's best made just before the meal and stored in the fridge. To impress guests, plate it in individual molds, a clear glass bowl, or small cups.
