  • Start by prepping the ingredients: wash the leek, pat it dry with a paper towel, and slice it very thinly into rounds; rinse the salmon if needed (skinless fillet is best), pat it dry, and cut it into small pieces; wipe the mushrooms clean with paper towels and slice them thin; rinse the fresh dill, lay it on a dry towel, and finely chop it. Now you can start cooking. Set a large deep skillet over medium heat and add the vegetable oil. Heat the oil, then add the sliced leek. Sauté, stirring, for a few minutes until soft. Pour in the white wine and cook the leek until the liquid has almost completely evaporated. Then pour in the broth and stir. Wait for it to come to a boil. Meanwhile, bring a large pot of lightly salted water to a boil and cook the pappardelle until done, following the package directions. Drain the cooked pappardelle in a colander and let the excess water drip off. Once the broth boils, add the mushrooms and fish to the skillet. Cook everything together, stirring, for 4 minutes. Season with salt and black pepper. Add the heavy cream, stir, and cook for another 2 minutes. Add the drained pasta and drizzle everything with lemon juice (freshly squeezed is best). Gently toss with a spatula. The dish is ready — just plate it nicely, sprinkle with finely chopped dill, and serve hot. Enjoy!
