Step 1:
Mountain ash is usually harvested in August-September. It grows both in the garden and in the forest, the forest berry, of course, is more environmentally friendly and useful. Rowan has a peculiar bitterness, which scares many housewives about using it for food. But in fact, it is easy to get rid of the bitterness in berries by freezing mountain ash in the freezer, or wait for frosts and pick berries after them.

Prepare the ingredients for the jam.

The rowan berries are separated from the twigs, thoroughly washed under running water, thrown into a colander, let dry. After that, the berries can be put in the freezer for several hours to remove the bitterness from the rowan. If you like the taste of fresh mountain ash, you can not freeze it.
Step 4:
Pour clean water into the jam pot, add sugar and put it on fire. Cook the syrup, stirring with a spoon over medium heat until the sugar is completely dissolved. Then we lower the rowan berries into the syrup. We give the jam preparation to boil and immediately turn off the fire. Cover the pan with a lid and leave at room temperature for 6 hours.
Step 5:
After the specified time, we put the jam back on the fire, after boiling the mixture, reduce the heat to a minimum and cook the jam for about 20 minutes, removing the foam formed on the surface.
Step 6:
We put the hot jam in sterile jars and close them with lids. Let the jam cool under a blanket at room temperature and put it away for storage in a cool place.
