Cuckoo's Nest Salad with Chicken, Mushrooms, and Potatoes

A stunningly pretty chicken-and-mushroom salad! A friend of mine makes this dish — we're always trading recipes, and she passed this one along: her "Nest" salad.

  • First, wash the potatoes, then peel them and cut them into thin matchsticks. A julienne grater or a Korean-carrot grater makes quick work of this. Start by setting the chicken to cook. Meanwhile, add the potatoes to a pan of hot vegetable oil and fry them over high heat. Fry them without stirring until a golden crust forms, then flip them and brown the other side the same way. Take the potatoes off the heat, salt them, and let them cool. Pull the chicken meat off the bones and shred it into fibers (not too fine). Cut the ham into thin strips and the mushrooms into small pieces. Separate the whites of the hard-boiled eggs from the yolks and grate the whites on the coarse side of a grater. Now make the "eggs": grate the yolks and the cheese on that same coarse grater. Wash, dry, and finely chop the herbs. Peel the garlic and run it through a press. To form pretty little "eggs," combine the grated yolks with the cheese, herbs, and garlic, add a little mayonnaise to bind it, and mix well — you'll find it easy to shape the cheese mixture into small eggs. In a bowl, combine the chicken with the mushrooms, ham, and grated egg whites. Stir in the mayonnaise and mix well. Line a flat plate with washed, dried lettuce leaves. Mound the chicken mixture on top in the shape of a nest, making a small hollow in the center. Decorate the salad with the fried potato straws to mimic a bird's nest, and set the cheese "eggs" in the hollow. Don't forget to finish this little work of art with a sprinkle of fresh herbs.
