  • For this version of the "Favorite" salad, we'll use grilled chicken breast. It's very easy to make, though you can buy it ready-made and save time. To make it yourself, preheat the grill to 480°F (250°C), rinse the breast under running water, pat it dry with a paper towel, salt it lightly, and grill until cooked through. You can also use an air fryer or a convection oven. Wait until the chicken has cooled completely before working with it further. Cut the breast into small cubes and set it aside on a plate. The "Favorite" salad is built in layers, so first cut all the components into separate bowls, then assemble the finished dish. Dice the tomatoes. Chop the onion as finely as you can, into small cubes or thin half-moons; then put the chopped onion in a colander and pour boiling water over it. This takes away the harsh bite without losing the flavor. Keep the vegetables in separate bowls. Wash the mushrooms and wipe them dry with a towel so there's no excess moisture when you slice them. Slice them thin. Heat a skillet with vegetable oil, add the mushrooms and a little salt, and fry until done (about 15 minutes); they should reduce by half and turn golden. Let the cooked mushrooms cool on a plate or in a colander if you need to drain off excess fat. Hard-boil the eggs and plunge them into ice water until fully cooled. Once cooled, peel them and grate on the coarse side of a grater. When everything is ready, assemble the salad. You can serve it on one large platter, or in individual portions for each guest — the individual version looks more striking and finished. Set a ring mold on a plate. Lay down the chicken as the first layer, then the onion. Salt to taste and spread with mayonnaise. Next add the mushrooms. Since they're fairly rich, add the eggs right on top of them, spread with mayonnaise, and salt if you like. Add a layer of grated cheese and finish the salad with tomato pieces. Garnish however you like — with fresh herbs or a drizzle of mayonnaise — and serve. Enjoy!
