Corn-on-the-Cob Salad with Chicken

Your favorite corn salad, dressed up in a whole new look! You can shape just about any corn salad—or any salad you'd add corn to—into the form of an ear of corn. Layering it isn't strictly necessary: if you're short on time, just mix everything with mayonnaise, mound it on a plate in the shape of a cob, and cover it with corn (this shortcut only works if you're serving right away). Apart from arranging the corn, the whole thing comes together in minutes. About that corn topping—for the photo I placed the kernels almost one at a time, which is very tedious, so I'd suggest just scattering corn over the top and smoothing it out; it won't look quite as neat, but the taste won't suffer. If you do want it picture-perfect, recruit the whole family to help—the job goes faster and is a lot more fun. Dig in!

    The ingredients. To keep the prep time short, the day before I baked a chicken breast (I needed one for this salad) and boiled the eggs. If you prefer, you can simply poach the chicken in water.

    Layer 1. Cut the chicken into cubes, mound it on a plate, and shape it into an ear of corn. Coat with mayonnaise.

    Layer 2. Grate the eggs on the fine side of a box grater and spread them over the chicken. Cover with mayonnaise.

    Layer 3. Cut the onion into small dice and scatter it on top. It all but disappears under the mayonnaise, but it's there. :) Add more mayonnaise if needed.

    Layer 4. Grate the cheese on the fine grater and spread it over the top, mounding it slightly so the surface is gently rounded. Cover with mayonnaise.

    Layer 5. Now for the fun part: arrange a layer of corn kernels over the top. Larger kernels make the job go much faster.

    Garnish the salad with green onion to look like husks. Slit a green onion stalk lengthwise on one side and lay it alongside the corn, pressing it into the mayonnaise to hold. Your salad is ready to serve. Enjoy!
