- Pick tasty, firm tomatoes that won't split later. Plum (Roma) tomatoes are ideal, since they're meatier, smaller, and easy to fit into jars — but other varieties work too. First, wash the tomatoes well under running water to rinse off any dust, then let them dry. Choose fruit with no spots, blemishes, or cracks. Meanwhile, get your jars ready: wash the glass jars well inside and out, sterilize them over steam, and boil the lids in a pot. Into each sterilized jar, put a bay leaf, a few peppercorns, and a couple of cloves. Pack the tomatoes in tightly; if they're large, cut them in half. Boil water and pour it into the jars of tomatoes. Cover with the lids and let them stand for 15 minutes. Then carefully (the jars are hot!) drain the water back into a pot. Add the salt and sugar, stir, set the pot over the heat, and bring to a boil. Cook the brine for about 8–10 minutes. At the end, add the 9% vinegar and take the pot off the heat — the brine is ready. Peel the garlic into cloves and rinse. Add a clove of garlic and a sprinkle of ground cinnamon to each jar of tomatoes, then pour in the hot brine. Seal the jars right away with the sterilized lids. Set them upside down on a hard surface and wrap them in a warm blanket; leave them until completely cool. Then move the jars to a dark, cool place, where they'll keep for a year. Happy canning!
