Chicken, Sour Cream, and Cucumber Salad

What I love about this chicken, sour cream, and cucumber salad is that, beyond the foolproof combo of ingredients, it comes together fast — which matters to me! It's easy to make and a pleasure to eat. It doesn't keep long, but it never needs to — it disappears every time!

    How do you make chicken, sour cream, and cucumber salad? Boil and peel the eggs ahead of time, and wash and dry the cucumber and dill. Cut the smoked breast into thin strips. For a lighter salad, you can swap in poached chicken — it's just as good.

    Cut the cucumber into strips as well.

    Finely chop the dill.

    Cut the eggs into strips and add everything to a salad bowl — don't forget the corn.

    For the dressing, you can use just sour cream, or stir in something for extra flavor: mustard, a sauce, or pepper. I mixed a little spicy mustard into the sour cream.

    You can serve it just like this and toss it right before eating, or plate it in portions — it's up to you!
