"Man's Whim" Layered Salad with Smoked Chicken

A really tasty, simple, and tender salad for the men in your life — and everyone else! This salad is truly versatile: it looks great on a New Year's table, works for a guys' party or birthday, and is easy enough to make any day of the week. The classic version uses beef, but I make mine with smoked chicken. I hope the men in your house enjoy it — mine did, and I loved it too!

    Gather all the ingredients. Boil the eggs for 8 minutes from the time the water boils, adding 1 tablespoon of salt to make them easier to peel.

    Peel the onion.

    Slice it into thin half-moons.

    Now the onion needs a quick pickle — do it however you like: with lemon juice, boiling water, or 15–20 minutes in the freezer. I use a little apple cider vinegar.

    Then add the sugar.

    Stir and pour in the hot water. Let the onion marinate for about 20 minutes; the sharpness should mellow, but taste it and give it a bit longer if needed.

    Meanwhile, once the eggs are done, run them under cold water and let them cool.

    Peel them and separate the yolks from the whites.

    Once the onion has marinated, drain off the liquid.

    Lay the pickled onion down as the first layer on a plate. For a nice presentation I first set 3 large lettuce leaves on the plate and layered the onion on top of them, but that's optional. Cut the smoked chicken into cubes and arrange them over the onion.

    Spread a good layer of mayonnaise. The men in my family love mayonnaise, and no matter how I try to wean them off it, it's hopeless!

    Grate the egg whites on the coarse side of a grater.

    Add the grated egg whites as the next layer and spread with mayonnaise.

    Then grate the yolks on the fine side (or mash them with a fork) — no mayonnaise needed on this layer.

    The final layer is cheese, finely grated. Garnish with sprigs of fresh herbs if you like.
