Squid Salad with Smoked Cheese and Napa Cabbage

    1. Boil water in a kettle. Put the frozen squid in a bowl and pour the boiling water over them. Leave for a minute or two, until the skin curls off, then drain off the hot water and cover the squid with cold water. Let them sit until cool, then take them out and clean them: gently pry up an edge of the skin and peel it away, then remove the innards and the cartilage quill. Rinse the squid well again under running water. Separately, bring a pot of water to a boil, salt it to taste, and drop in the squid. Cook for 2–3 minutes from the time the water returns to a boil, then drain. Cool the squid and cut into thin strips. 2. Put the eggs in a pot of water and boil for 10 minutes from the time it boils. Drain off the hot water, cover with cold, then peel and cut into strips. 3. Peel the wrapper off the smoked cheese, trim the edges, and cut the rest into sticks. 4. Wash the Napa cabbage well, dry it, and finely shred it. 5. Wash and dry the cucumbers, set them on a cutting board, and cut into strips. 6. Combine all the prepared ingredients in a salad bowl. 7. Make the dressing: stir together the freshly squeezed lemon juice and soy sauce. Add ground black pepper to taste and whisk well with a hand whisk or fork. Taste it and add salt if needed — and that's it, the dressing is ready! 8. Pour the dressing over the squid-and-cheese salad and toss everything together. Taste and add salt if needed. Garnish with fresh herbs if you like, and serve. Enjoy!
