  • Not just any rice works for this dish—basmati or parboiled rice is best. Sticky varieties don't work at all. Cook the rice before the main step, and be sure to rinse it well first. To cook this rice, use twice as much water as rice. Add the rice to boiling water and cook until it has fully absorbed the water (about 20 minutes). Spoon the cooked rice into a dish and cover with a lid. Now you can move on to the main part. A wok is the ideal pan for this vegetable side dish, but any skillet will do. Heat the olive oil in the pan. Meanwhile, peel and finely chop the garlic. Add the garlic to the hot oil and fry until golden so it releases its aroma into the oil. Add the Italian vegetable mix to the pan and stir. Season with salt, ground white pepper, and a pinch of your favorite aromatic herbs. Fry the vegetables over high heat for 10 minutes—don't forget to stir! Then add half a cup of vegetable broth (or boiling water), cover, lower the heat, and simmer until the vegetables are tender. This takes about 15–20 minutes; you want the excess liquid to cook off. Stir the rice into the vegetables. Taste, adjust the salt and pepper if needed, and let it steam, covered, for another 10 minutes. Rice with frozen vegetables is ready! Enjoy!
