Rice with olive oil and frozen Italian mixture

Not every rice is suitable for this dish - it is best to use "basmati" or "parboild", better known as steamed rice. Sticky rice varieties are not suitable at all.

Before the main stage of cooking, the rice should be boiled, and before cooking, be sure to rinse thoroughly. To boil such rice, you need to take twice as much water as cereals. Put the rice in boiling water and cook it until it completely absorbs the water (about 20 minutes). Ready rice should be put in a dish and covered with a lid.

Now you can start the main part of cooking. The ideal dish for making a side dish with an Italian vegetable mixture is a wok frying pan. But you can cook it in any other frying pan.

So, heat up the olive oil in a frying pan. Meanwhile, peel the garlic from the husk, chop it finely. Now you need to add garlic to the heated oil and fry until golden brown, so that it "gives" its flavor to the oil.

Pour the Italian vegetable mixture into the pan, stir. Add salt, sprinkle with ground white pepper and season with a pinch of your favorite aromatic herbs.

Fry the vegetables over high heat for 10 minutes. Don't forget to get in the way! Next, add half a cup of vegetable broth (or boiling water), cover with a lid, turn down the heat and simmer until the vegetables are ready. This will take about 15-20 minutes. It is necessary that the excess liquid evaporates.

Mix rice with vegetables. Try the dish, if necessary, add salt and pepper, let it steam under the lid for another 10 minutes.
