Step 1:
Defrost the squid. This can be done under warm water.
Step 2:
Before cooking squid, they need to be cleaned. Peel off the skin (pink) of the squid. And under it there is another thin transparent film (because of it, the squid turns out to be harsh). The easiest way to do this is in hot water, it collapses and is removed effortlessly. We also remove all the insides and transparent seals in the nose of the carcass.
Step 3:
Next is the most important thing! Cook the squid properly. Squid tend to shrink in size when cooked for more than 3 minutes and turn into a tight "rubber". You can cook squid by dropping it into boiling salted water for only 30 seconds. During this time, the squid will cook and will almost not lose in size. However, if you accidentally overcooked the squid, cook them for a total of 20 minutes - then the squid will return softness, although it will decrease in size by almost 2 times.
Step 4:
Cool the cooked squid, cut into rings. Place on a platter and sprinkle with freshly ground pepper. If desired, you can sprinkle with lemon juice. Bon appetit!
