Vareniki with Frozen Cherries
Meatless dishes can be truly delicious! Let me show you how to make vareniki (Ukrainian-style dumplings) with frozen cherries. They'll please everyone, even though they're a vegetarian dish. Another bonus: you can make them in winter, too, using berries you've stashed away in the freezer.

- First, take the cherries out of the freezer so they have time to thaw a bit. Meanwhile, make the dough: sift the flour into a deep bowl, add the salt, and pour in the sunflower oil and the hot water (not boiling!); knead the dough. It shouldn't stick to your hands—it should be smooth and elastic. Let it rest for just 15–20 minutes. Then proceed as usual: roll out the dough and cut out rounds with a glass; place a few cherries in the center of each round and form the vareniki. Once all the vareniki are shaped, drop them into boiling water in batches. Cook for 10 minutes. Vareniki are usually served with sour cream, but I'd suggest breaking with tradition and making a cherry sauce—it's incredibly good! For it, cook the cherry juice with the sugar. Once the syrup boils, pour in the starch dissolved in water in a thin stream. Cook for another minute or two, stirring. Enjoy the vareniki with the sauce poured over. Enjoy!
