  • Keep in mind that this quick cherry jam isn't for anyone watching their weight—the sugar content is quite high. Sort the cherries carefully, then rinse and pat them dry with a clean, dry cloth or paper towel. Gently remove the pits. Put the cherries in a nonreactive (enameled) pot, cover with the sugar, and stir. Let them sit for 4-5 hours to draw out the juices. Once the time is up, cook the jam for about five minutes, stirring constantly and skimming off any foam that forms. While still hot, ladle the jam into clean, dry jars and seal with lids. Turn the jars upside down and let them cool in a warm spot. Store the finished jam in a cool, dark place. Come winter it makes a wonderful dessert with tea, and it's also great as a filling for pies and pastries.
