Canned Rassolnik Soup Base with Fresh Cucumbers and Pearl Barley
A simple make-ahead jar for winter that's easy on both your budget and your time! This rassolnik base—fresh cucumbers and pearl barley canned for the season—lets you put together a delicious, hearty soup (rassolnik is a classic Eastern European pickle soup) in just minutes on a cold day. That really matters when the daylight is short and there's so much you want to get done!
Cooking method

Step 1:
Cook the pearl barley until tender using whatever method you prefer (you'll need 500 g of cooked barley). Cut the onion, carrots, and cucumbers the way you'd cut vegetables for soup. Trim the stem ends and any blemishes from the tomatoes.

Blend or process the tomatoes into a smooth purée.

Pour the tomato purée from the previous step into a large pot and set it on the stove.

Add the water and bring the liquid to a boil.

Add the vegetable oil, salt, and sugar.

Step 6:
Add the carrots, bring to a boil, and cook for half an hour.

Step 7:
Add the onion, bring to a boil, and cook for 10 minutes.

Wash the jars with baking soda and sterilize them in the oven—or use whatever method works best for you.

Add the cucumbers and vinegar to the pot and stir.

Add the pearl barley and stir to combine.

Bring to a boil and cook for half an hour.

Step 12:
Without taking the pot off the heat, ladle the hot rassolnik into the jars, seal them, and turn them upside down until completely cool.

Store in a dark place right up until you're craving a bowl of delicious homemade soup.
