Sweet Cherry Jam for the Winter
Put up summer's berries and savor their flavor and aroma all through the cold months! I adore sweet cherries and the jam made from them, and every year I try to put away at least a few jars of this treat. Guests are always delighted, and at home we open a jar on especially gray, cold days to give ourselves a little burst of summer sunshine!

- Sort the cherries, remove the stems, rinse, and spread them on a towel to dry. 2. Prick each cherry with a toothpick — this helps them stay whole and pretty as they cook. 3. Make the syrup: pour the water into a pot, add the sugar, and bring to a boil, stirring constantly until every sugar crystal has dissolved. 4. Add the prepared cherries to the boiling syrup and wait for the mixture to return to a boil. 5. Add the cinnamon (or vanilla), if using. 6. Simmer the jam over low heat for 1 to 1 1/2 hours. The longer you cook it, the thicker it becomes — eventually rich and caramel-like. 7. Ladle the finished jam into sterilized jars, seal them, let them cool in a warm spot, then move them to a cool place for storage. Here's to sweet cups of tea this winter!
