Frozen Honeyberry Jam

A tea-time treat you can make even in the dead of winter! Jam from frozen honeyberries (honeysuckle) is no harder to make than from fresh ones. The beauty of this recipe is that you can whip up a favorite treat and enjoy it in the middle of winter. Freeze the honeyberries yourself in season, or buy them frozen at the store. This jam is a great addition to oatmeal, casseroles, crêpes, and pancakes. Stir it into pies and pastries, or serve it on its own as a dessert with tea.

  • For this recipe you'll need about 2 pounds (1 kg) of frozen berries — and there's no need to thaw them ahead of time. Tip the still-frozen berries into a large bowl. If there's too much ice, put them in a colander first and rinse with boiled water, then let the excess drain. Next, make the sugar syrup: pour the sugar into a large enameled pot, then add the water. Set the pot over low heat and stir constantly, cooking until all the sugar crystals have dissolved. Let the syrup cool to room temperature. Add the honeyberries to the pot with the syrup and let them stand for an hour. After that, set the pot over medium heat, bring to a boil, then lower the heat to its minimum and cook the jam for 10 minutes. Meanwhile, prepare your jars and lids — they must be sterilized. The microwave method works great: pour a little water into each jar and heat it in the oven for 3 minutes. Boil the lids in water for a couple of minutes. Ladle the still-boiling jam into small sterilized jars and seal them with sterilized lids. Let the jam cool completely over a day at room temperature, then move it to a cool place for storage — though it usually doesn't last long, since it comes out incredibly tasty and fragrant! The jam is ready!
