  • First, gather everything you'll need to cook and can the plum and apple jam. Since fruit is the star ingredient here, choose it carefully: it should be ripe, with no rotten spots or blemishes. Only then will you get a truly tasty, thick jam with the right consistency. Apples usually take a bit longer to cook, so start with them. Rinse them well, pat them dry, cut them in half, and remove the seeds. Cut the apple flesh into small cubes. Put the apple cubes in a large pot and add a little fresh water. Set the pot over low heat and simmer the apples until soft, about 10–15 minutes (depending on the variety). While the apples cook, prep the plums: rinse them well under running water, dry them, and cut them in half. Remove the pits and chop the plums finely. Add the plums to the pot with the apples and keep cooking everything together over low heat for another 10–15 minutes, until the plums release their juice and break down into a purée. Take the pot off the heat and, using a large spoon, transfer the fruit mixture to a large-holed sieve. Press the fruit through the sieve until smooth. Return the fruit purée to the pot, set it over medium heat, and bring to a boil. Cook the puréed fruit for 5 minutes, then add the sugar. Lower the heat to a simmer and cook the jam for another 10–15 minutes, stirring constantly with a spoon or wooden spatula so the sugar doesn't scorch on the bottom. Wash the jars and lids thoroughly and sterilize them however you like. Take the pot off the heat and immediately pour the hot jam into the clean jars, sealing with the lids. Turn the sealed jars upside down on the counter and cover them with something warm. Leave them until completely cool, then move them to a cellar or pantry for storage.
