- Fresh cranberries make this especially good, but they aren't always available — frozen work just fine; simply thaw them first. Rinse the cranberries in a colander, let them drain, and put them in a medium saucepan (enameled or stainless steel is best). Add the granulated sugar, water, and orange juice, and stir to combine. Set the pan over low heat and bring to a boil. Once it starts boiling, cook the sauce for 20 minutes, stirring now and then. The berries will begin to pop, and by the end of cooking they should all have burst. Stir in the dry red wine and most of the finely chopped orange zest, reserving a little for garnish. Cook everything together for 1–2 minutes, then remove from the heat and let cool. The sauce will thicken as it cools, thanks to the natural pectin in the berries. Spoon the finished sauce into a pretty dish and sprinkle with the reserved orange zest. Chill it in the refrigerator before serving if you like. Enjoy! P.S. This cranberry sauce keeps in the refrigerator for at least a week — store it in an airtight container, such as an ordinary glass jar.
