Homemade Salted Farmer's Cheese
Make tasty, fragrant salted cheese right at home! Delicious salted cheese is easy to make at home with little time and just a few ingredients, and the result is simply amazing. A slice of it with your morning coffee makes a wonderful breakfast!

Step 1:
Gather these simple ingredients. The sour cream can be any fat content you like.

Pour the milk into a saucepan, add the salt, and bring it to a boil.

While the milk heats up, whisk the sour cream with the eggs.

Pour the sour cream mixture into the boiling milk, stirring slowly. Don't worry if the curds don't form right away — they'll appear once it returns to a boil. Boil for about 4–5 minutes, until everything has curdled. Then let it sit on the stove a little longer and turn off the heat.

Step 5:
Meanwhile, prepare a mold. I have a plastic cheese mold with a draining insert and a lid. If you don't have one, fold cheesecloth into 3–4 layers, line a colander with it, and pour in the curds — just remember to set a container underneath to catch the whey. Then gather the cheesecloth by the corners, shape the cheese into a ball, and press it under a weight for a while. The heavier the weight and the longer it drains, the firmer the cheese will be.

Step 6:
I poured the curds into the mold and set it in a deep container, so all the whey drains into it. Don't toss the whey — you can use it for delicious crêpes and pancakes, or to bake rolls or bread. We have plenty of recipes on the site! Or just drink it — it's really good!

Cover with the lid and set it under a weight.

And here's our homemade salted cheese! Very tasty and tender, with the salt giving it a lovely flavor. Delicious with a cup of coffee.
