- Wash the pomelo thoroughly, pat it dry, and carefully peel off the colored zest without taking the white pith. Cut the peel into strips. 2. Pour water into a saucepan and bring to a boil. Add the peel, blanch for no more than 1 minute, then drain and rinse the peel under running water. 3. Repeat the blanching three times to draw out the pomelo peel's characteristic bitterness. 4. Make the syrup: pour water into a saucepan and set it over the heat. When it boils, add the sugar and stir until fully dissolved. 5. Add the peel to the syrup and cook over low heat for an hour and a half — all the liquid should be absorbed and the peel strips should turn translucent. 6. The treat is nearly done. Spread the candied peel on a sheet of parchment or a rack, sprinkle with sugar, and leave it for 3 hours to dry, turning it now and then for even drying.
