How to Melt Chocolate for Decorating
A simple but striking way to dress up baked goods and desserts! Tasty, fragrant pastries and a plain dessert turn into something festive and beautiful with just a drizzle of melted milk or dark chocolate. There are several ways to melt chocolate, but the easiest and fastest is right on the stovetop. Since we want a thick chocolate for decorating, we'll melt it with a little butter. Most important: use real chocolate, the kind that actually contains cocoa.

Step 1:
The ingredients should be at room temperature so the chocolate melts evenly and quickly, so take them out of the fridge ahead of time.

In a heavy-bottomed saucepan (if you only need a little chocolate, a small long-handled pot like a cezve works fine), bring the water to a boil, then add the butter cut into pieces and the chocolate broken into small bits. Set the heat to low and stir constantly, waiting for it to start melting. Keep stirring the whole time, or it can scorch on the bottom of the pan.

As soon as the mixture is smooth and glossy, take it off the heat, pour it into a container, and let it cool a little.
