    1. Rinse the chicken fillet, cut it into large pieces, put it in a pot, cover with water, bring to a boil, and continue cooking until the meat is done. 2. Peel the ginger and chop it finely. Cut the garlic scapes into large pieces. 3. Heat the peanut oil, add the chopped ginger, and fry, stirring, for 2 minutes. Then add it to the broth, pour in the wine and soy sauce, and season with white pepper. 4. When the soup returns to a boil, add the mushrooms and garlic scapes, cook for 5–10 minutes, then take it off the heat. Ladle into bowls and serve. Enjoy!
