Chicken Noodle Soup

For one thing, it's good for digestion; for another, soup is hearty and nourishing without being too heavy (depending on the ingredients, of course). This chicken noodle soup is light and satisfying — just right for a spring menu.

- You can use any part of the chicken, but the soup will be leaner and healthier with breast meat. Rinse the meat and cut it into small pieces. Wash and peel the potatoes and carrots. Cut the potatoes into sticks and grate the carrots. Finely chop the onion. Put the meat and vegetables in a pot, cover with water, and set over the heat. Salt to taste. When the broth comes to a boil, skim off the foam, reduce the heat to medium, and cook for about 25 minutes. Then add the pasta — any shape you like — stir so it doesn't stick to the bottom, and cook for another 15 minutes or so. Turn off the heat and let the soup rest, covered, for 10–15 minutes. Serve with fresh herbs. Enjoy!
