Prickly Pear Cactus Jam

An interesting, unusual, delicious, and very wholesome jam! I recently tried this incredibly tasty jam at a neighbor's house and just couldn't guess what she'd made it from. Turns out it was prickly pear cactus fruit. Bright, delicious, and sweet with a gentle tang. I really recommend making this cactus jam!

    1. Peel the cactus fruit—prickly pear is the most common choice. Peel carefully, holding the fruit steady with a fork. Cut the peeled flesh into pieces. 2. Transfer to a saucepan and simmer over low heat for 10 minutes. Press the flesh through a sieve, return it to the pan, and add the sugar and lemon juice. Cook over low heat for half an hour, stirring now and then with a wooden spatula. 3. Soak the gelatin in cold water according to the package directions. Stir the bloomed gelatin into the jam until fully dissolved. 4. Pour the hot jam into jars. Enjoy with a nice cup of tea!
