Simple Creamy Semolina Porridge

Semolina porridge made with milk is a light and tasty breakfast. Cooked in milk—especially whole milk with a higher fat content—it's filling enough to make a nourishing breakfast for the whole family. You can also top it with your favorite fresh fruit, dried fruit, or jam.

  • Pour the milk into a heavy-bottomed saucepan and set it over the heat.
  • Once the milk warms up, add the sugar and salt and stir until dissolved. When the milk comes to a boil, sprinkle in the semolina—do it slowly, in a thin stream from a cup.
  • At the same time, keep stirring constantly with your other hand. Bring the porridge to a boil and cook for about 5 minutes, stirring all the while.
  • When the porridge starts to bubble and sputter, turn off the heat and let it sit, covered, for about fifteen minutes. Serve with butter and, if you like, jam or fresh fruit.
