Frozen Strawberry Jelly (Kisel)

A gorgeous, deeply flavorful low-calorie strawberry dessert! My family absolutely loves this strawberry kisel — a silky, starch-thickened fruit drink you sip warm or chilled. You can make it thicker by stirring in a little more cornstarch, and sweeten it to taste. Either way it comes out vivid, fragrant, and bursting with strawberry flavor — like a bright little piece of summer that lifts the whole family's mood.

    1. Take the frozen strawberries straight from the freezer — no need to thaw them first. Put them in a saucepan and pour in about 800 ml (3⅓ cups) of the water. 2. Set the pan over the heat, bring to a boil, and stir in sugar to taste. Once it boils, let the berries simmer another 5 minutes; in that time the liquid takes on a bright color and a wonderful strawberry aroma. 3. In a small bowl, stir the cornstarch into the remaining cold water (about 200 ml / ¾ cup) and whisk until smooth. 4. Pour the cornstarch slurry into the simmering kisel, stirring as you go. Keep it over low heat and do not let it return to a full boil. As soon as the kisel begins to thicken, pull the pan off the heat. Let it cool a little, then serve this gorgeous strawberry drink!
