- Cook the rice: rinse it well, then cook it according to the package directions. 2. Cut the crab sticks and a fresh cucumber into sticks. 3. Once the rice has cooled a little, season it with salt, the rice vinegar, and sugar, and stir everything together. 4. With damp hands, spread the rice over a sheet of nori and press it down gently. Down the center, lay the crab sticks and cucumber along with a strip of soft cream cheese. 5. Using the mat, roll it up into a nice tight log. Cut it into 6 pieces. 6. Line a baking sheet with parchment paper, arrange the rolls on it, sprinkle the grated hard cheese over the top, and slide it into a preheated oven. Once the cheese has melted and turned golden and bubbly, take them out and serve hot.
