Frozen Cranberry and Black Currant Kissel

This drink is a real vitamin powerhouse for the cold months! Kissel — a classic Slavic starch-thickened fruit drink — comes out so good here, with the tartness of cranberries, the fragrance of black currant, and a deep, vivid color. Kids love it every bit as much as grown-ups do.

    1. Take the cranberries and black currants out of the freezer and let them thaw. Purée the berries in a blender until smooth. 2. Transfer the berry purée to a saucepan, pour in about 800 ml (3 1/3 cups) of water, bring to a boil, then simmer for another 5 minutes. 3. Strain through a fine sieve or 2–3 layers of cheesecloth. Stir in sugar to taste and bring the syrup back to a gentle simmer. 4. Dissolve the starch in a glass of cold water and pour it into the syrup, stirring quickly so no lumps form. Don't cook it long — as soon as it begins to thicken, pull the pan off the heat; it will set up more as it cools. To keep a skin from forming on top, sprinkle a little sugar over the surface and let it cool covered. Kissel is good served either hot or cold.
