- Soak the gelatin in cold water and leave it for 15–20 minutes. Meanwhile, pour the juice into a saucepan. You can use juice from any fresh berries or fruit — cherry, raspberry, and currant juice all make wonderfully tasty candies, and a mixed-fruit blend looks especially pretty. 2. Set the pan of juice over the heat, pour in the sugar, and cook the syrup, stirring now and then. Once it comes to a boil, cook for another 5–10 minutes, skimming off the foam, then add the gelatin water. Continue cooking gently over low heat, then strain through a sieve. If you have candy molds, pour it into those; I use square silicone baking pans. Once the mixture has cooled a bit, refrigerate it. After a while — the setting time depends on the gelatin and the mold size — turn it out, cut the candies into squares, roll them in sugar, and arrange them on a plate. Time to serve!
