- Boil the macaroni in lightly salted water until half-cooked, then drain it in a colander.
- Steam the broccoli (washed first and broken into florets) for 4 minutes (I steam it right over the pot of pasta — it's convenient and saves a step).
- Put the butter in a saucepan over the heat and melt it. Stir the flour into the melted butter and mix.
- Pour the milk into the mixture in a thin stream, having warmed it first in the microwave or on the stove, and cook the sauce until thickened.
- Add the mustard, paprika, nutmeg, ground black pepper, Worcestershire sauce, and salt to the sauce and stir (if the sauce isn't smooth and has lumps, push it through a sieve).
- Grate the parmesan and half of the cheddar. Add the cheeses to the hot sauce and whisk until they melt completely.
- Put the macaroni in a baking dish, pour in all of the fragrant sauce, add the broccoli, and mix.
- Grate the remaining cheddar over the top, then bake in an oven preheated to 350°F (180°C) for 15–20 minutes.
- Serve hot.
