Mirror Glaze for Decorating Desserts

This mirror glaze is pure, dazzling magic! My child had a birthday recently, and I decided to bake the cake myself. I spent ages deciding what to make and how to decorate it. The cake, coated in this stunning mirror glaze, looked absolutely amazing. Bright, beautiful, and dressed up with fresh berries, it was the real star of the evening!

    1. Pour 50 ml of water over the gelatin and let it bloom for half an hour.
    1. In a bowl, stir together the melted white chocolate, condensed milk, and gelatin.
    1. In a saucepan, combine the water, sugar, and invert syrup. Bring to a boil and let it cook until the sugar has fully dissolved, then stir it into the chocolate mixture.
    1. Dissolve a little titanium dioxide (white food coloring) in the vodka and stir it into the glaze to turn it snow-white. From there, add gel food coloring to tint the glaze whatever shade you like.
    1. Cover with plastic wrap and refrigerate for a few hours. Warm to about 86°F (30°C) before using.
