    1. Scrub the beets well. Put them in a saucepan and cover with water; once it boils, cover with a lid and cook over very low heat. When the beets are done, plunge them into ice water — the skins will then slip off easily. 2. Cut into cubes and pack into sterilized jars. Strain 1 quart (1 liter) of the cooking water and add the spices, salt, and sugar. 3. Set the filled jars in a pot, add warm water up to the shoulders, and once it boils, process for 20-30 minutes, depending on the jar size. Then seal the lids and set the jars in a warm spot to cool down.
