Beef Shurpa in a Pot

A fragrant soup inspired by Uzbek cooking — go ahead and make it! I fell for shurpa a long time ago; it's incredibly tasty and somehow just special. Shurpa is no trouble to make, and the ingredients are easy to find. Give it a try! (Shurpa is a hearty Central Asian meat-and-vegetable soup.)

  • Wash the beef, cut it into large cubes, and put it in a heavy-bottomed pot.
  • Peel the onion, cut it into large cubes, add it to the pot with the meat, pour in the vegetable oil, and brown over medium heat for 5 minutes.
  • Score a small X in the bottom of each tomato, pour boiling water over them, peel off the skins, chop coarsely, and add to the meat.
  • Wash the bell peppers, remove the seeds, cut into strips, and add them to the pot as well.
  • Peel the carrots, grate them on the coarse side of a box grater, and add them after the peppers. Pour in the water, stir in the tomato paste, and mix well.
  • Peel the potatoes and cut them into cubes; once the broth comes to a boil, add them to the pot and season with salt. Cook the shurpa for 20 minutes, then turn the heat down to the lowest setting and let it gently simmer for about half an hour.
  • Peel the garlic, press it in, and add it to the soup along with the bay leaf 5 minutes before the end of cooking.
  • Ladle the finished shurpa into bowls and sprinkle with finely chopped dill and parsley.
  • Dig in and enjoy!
