Russian-Style Pike Fish Soup (Ukha)
A culinary masterpiece — absolutely finger-licking good! Pike makes the best ukha; this fish is just made for the soup. The recipe is simple and unfussy, yet the soup comes out with a wonderful flavor. Slip the pike into boiling water and cook it over the lowest heat, letting the soup gently simmer. Give it a little time to rest, then call everyone to the table!

- You'll need pike fillet, so first clean the fish: scale it, remove the gills, and take out the dark membrane inside. Cut the fish into pieces or cook it whole, whichever you prefer. 2. Add the fish to boiling water. Add the chopped onion and carrot, along with the spices. As foam rises, skim it off with a slotted spoon. Once the pike is cooked, lift it out of the broth and strain the broth through a sieve or cheesecloth. 3. Add the potatoes to the strained broth and pour in the vodka. Once everything is cooked, ladle the soup into bowls and add a piece of fish to each. Garnish with boiled carrots sliced into rounds and some fresh herbs.
