Classic Black Prince Cake
Whip up a chocolate cake for teatime — it tastes incredible! I baked this over the weekend and the whole house was in a festive mood. My Black Prince cake turned out beautifully: the thin layers soaked up the sour cream filling overnight and came out so delicious!

- Crack the eggs into a deep bowl, add the sugar, and beat with a mixer. Sift in the cocoa powder and baking powder, add the vanilla sugar, pour in the milk, and blend with the mixer. Cut the margarine into cubes, add it to the bowl of batter, set the bowl over a water bath (double boiler), and bring to a boil, stirring constantly. Remove from the heat and let it cool, then work in the flour a little at a time and knead a smooth, soft, springy dough.
- Divide the dough into equal pieces and roll out thin layers about 9 inches (22–24 cm) across — you should get 10 layers. Bake them in an oven preheated to 400°F (200°C) for 7 minutes each.
- Put the sour cream in a bowl, add the sugar and vanilla sugar, and beat with a mixer. Gradually add the thickener, beating until the cream is thick and smooth. Spread the layers with the sour cream filling and refrigerate the cake overnight.
- Pour the cream into a saucepan, break the dark chocolate into pieces, and add it in, then set the pan over the heat. Stir the ganache with a whisk until the chocolate is fully melted, then remove from the heat. Pour the glaze over the top of the cake and decorate as you like.
