Sweet Canned Watermelon for Winter

    1. Remove the seeds from the watermelon flesh and cut it into small cubes.
    1. Put the watermelon cubes in a saucepan and add the water. Set it over very low heat, bring to a boil, and cook for about five minutes.
    1. Take the pan off the heat and let the watermelon cool.
    1. Squeeze the lemon juice into the pan and add the sugar. Let it sit at room temperature for two hours.
    1. Return the pan to low heat, bring it back to a boil, and cook for 5–7 minutes.
    1. Spoon the treat into sterilized jars, seal with lids, turn the jars upside down, and wrap them in a wool blanket. Leave them until completely cool, then move the jars to their permanent storage spot.
