- Bring water to a boil in a pot of suitable size.
- Rinse the grapes under running water and pull them off the stems.
- Add the grapes to the boiling water (I lower them in with a slotted spoon so I don't burn my hands) and add the sugar.
- Once the compote returns to a boil, lower the heat and cook for another 5–7 minutes.
- Cool the compote to room temperature, then pour it into pitchers and refrigerate for at least an hour.
- Be sure to serve it cold (a couple of ice cubes won't hurt — in fact, they'll only make it better).
