Step 1:
Wash and dry the berries, prepare everything you need

Remove from heat, rub through a sieve. Fold the remaining cake into 5-6 layers of gauze and squeeze all the juice and pulp of berries thoroughly with your hands.

Put the saucepan with the juice on a small fire again, add sugar.
Step 6:
Stir constantly, bring to a boil and remove from heat. Dissolve the swollen gelatin in a water bath and add to the berry puree. Stir well until the gelatin is completely dissolved and cool.
Step 7:
Pour the cooled mass into the whipping container and beat with a mixer for 10-15 minutes.
Step 8:
Beat until a lush dense mass is formed.
Step 9:
A thick air mass is obtained.
Step 10:
Before serving, the mousse must be cooled by placing it in cremans or tall glasses, decorated with whole berries. Bon appetit!
