Ukrainian Kapustnyak (Cabbage Soup)

A first-course soup you can enjoy even during a meatless fast — go ahead and make it! This is kapustnyak! Yes, I make it for Lent simply by leaving the meat out. On fasting days the menu should still be varied and full of wholesome, nourishing dishes — and kapustnyak fits the bill perfectly.

  • Peel the potatoes and cut them into cubes. Put them in a pot, cover with water, and set over the heat.
  • While the potatoes cook, peel the carrots and onion. Rinse them under running water and cut: dice the onion, and cut the carrots into thin sticks. Sauté in sunflower oil (I use refined) until golden.
  • Rinse the millet until the water runs clear (about 3 times). Add the millet to the potatoes, then stir in the sautéed vegetables. After about 5 minutes, add the sauerkraut (rinse it first).
  • At this point, add the salt and pepper, and cook until the cabbage is tender.
  • Finish the kapustnyak with finely chopped fresh herbs.
  • It smells so good! Enjoy!
