Kapustnyak (Ukrainian Cabbage Soup) with Rice

- Here's how to start:
- pull the meat off the bone and cut it into cubes;
- peel and rinse the potatoes;
- put the prepared meat and the potatoes (whole — no need to cut them) in a pot, cover with water, and cook until the potatoes are fully tender;
- lift the cooked potatoes out with a slotted spoon into a separate bowl and mash them, adding a little broth, mash again, cover with a lid and then a towel, and set aside;
- add the rice to the boiling broth (rinse it first, of course);
- wash and shred the cabbage and add it to the pot after the rice;
- peel the onion and dice it small, sauté in sunflower oil until golden, then stir in the flour and cook for another minute;
- check the rice for doneness, then add the onion mixture, mashed potatoes, tomato paste, bay leaf, peppercorns, and salt, and cook for 5 minutes.
- The kapustnyak is ready!
