Kapustnyak (Ukrainian Cabbage Soup) with Rice

Ukrainian kapustnyak — but made with rice instead of millet! Have you ever tried cabbage soup with rice? Now's the time to fix that. What makes this version interesting is that the usual green cabbage is swapped for napa cabbage, and raw meat for smoked chicken. The flavor of kapustnyak made this way is rich and full.   • Here's how to start:
    • pull the meat off the bone and cut it into cubes;
    • peel and rinse the potatoes;
    • put the prepared meat and the potatoes (whole — no need to cut them) in a pot, cover with water, and cook until the potatoes are fully tender;
    • lift the cooked potatoes out with a slotted spoon into a separate bowl and mash them, adding a little broth, mash again, cover with a lid and then a towel, and set aside;
    • add the rice to the boiling broth (rinse it first, of course);
    • wash and shred the cabbage and add it to the pot after the rice;
    • peel the onion and dice it small, sauté in sunflower oil until golden, then stir in the flour and cook for another minute;
    • check the rice for doneness, then add the onion mixture, mashed potatoes, tomato paste, bay leaf, peppercorns, and salt, and cook for 5 minutes.
