Kapustnyak with Fresh Cabbage

Make a Ukrainian classic for lunch — it's delicious! My grandma makes kapustnyak often, but usually with sauerkraut, which I'm not crazy about. My version is a little different, since I use fresh green cabbage. Give it a try — I think it's a worthy swap :)

    1. Make the broth the kapustnyak will cook in. Rinse the turkey, put it in a pot, cover with water, add salt, and cook until fully done (40–60 minutes). Skim off the foam. The first broth is generally recommended to drain, but I don't bother, since I often cook with homemade meat. Take the cooked meat out of the broth and cut it into serving pieces.
    1. Peel the potatoes, cut them into small pieces, and add them to the broth.
    1. Shred the cabbage and, once the broth with the potatoes boils, add it to the pot.
    1. Right after the cabbage, add the millet (rinse it several times first).
    1. Peel the carrots and onion. Dice the onion and grate the carrots. Sauté in vegetable oil until soft, then add to the pot.
    1. Season the kapustnyak with pepper, salt, and dried spices to taste, cook for another 5 minutes, then ladle into bowls and sprinkle with chopped herbs.
