Man's Caprice Salad with Cucumber

An appetizer salad with boiled beef and fresh cucumbers. There are lots of versions of "Man's Caprice" salad, but the star ingredient in all of them is meat. The beef needs to cook a good while — at least 2 hours. This salad is great for a gathering since it's so filling. You can simply toss all the ingredients together and dress them with mayonnaise, or, for a holiday table, layer them into a "cake." In winter you can make this salad with dill pickles.

Cooking method

    For "Man's Caprice" salad, you'll need boiled beef, hard-boiled eggs, fresh cucumbers and bell pepper, fresh dill and parsley, salt for cooking the meat, and mayonnaise for dressing. Get everything ready from the list. Boil the beef until tender, about 2 hours, salting it as it cooks. Cool the cooked meat and cut it into small pieces across the grain. Hard-boil the eggs.

    Peel the cucumbers.

    Cut the peeled cucumbers into small sticks.

    Cut the bell pepper open and remove the seeds.

    Peel the hard-boiled eggs and dice them, using an egg slicer if you have one.

    Finely chop the dill and parsley with a knife.

    Set an adjustable ring mold on a flat plate to shape the salad, and lay the chopped beef as the first layer.

    Drizzle mayonnaise over the meat.

    Next, add a layer of bell pepper.

    Right on top of the pepper, add the cucumber layer.
