Beetroot Nut salad

A healthy salad will not leave beetroot lovers indifferent! I tried to cook this salad during Lent, so I had to add vegetable oil instead of mayonnaise. I thought it would taste better with mayonnaise, but as it turned out, nothing like that. Delicious, nutritious, and most importantly a salad in a hurry. Most of the time is spent on cooking beets.

    Boil the beetroot

    Grate beets on a coarse grater

    Grate garlic on a fine grater. Mix beetroot, garlic and pine nuts, add oil (you can use mayonnaise instead of oil, but not in the post of course) Mix everything, you can decorate with herbs.

Very simple and quick to prepare salad. It fits perfectly into the Fasting diet.
