Perepechi with Potato (Udmurt Open-Faced Pastries)

Trade the same old potato hand pies for something more interesting! Hand pies are tasty, of course, but so familiar and everyday that they don't excite anymore. Perepechi, made from the very same ingredients, feel fresh and new. Give them a try — they don't take much time, and the result is wonderful. This amount makes 35 pieces of a good size, so if that's too many you can freeze part of the dough or just halve the recipe from the start.

  • Pour the soured milk into a bowl, add the sour cream, salt, and baking soda, crack in the egg, pour in the olive oil, and stir. Sift in the flour and knead the dough. Gather the finished dough into a ball, rub it with olive oil, cover with a cloth, and set it aside for a while. Meanwhile, peel the potatoes, cut them into quarters, put them in a pot, cover with water, salt, and set to cook. While the potatoes cook, peel the onion, chop it very finely, and sauté it in ghee. Check the potatoes for doneness, drain, then add the warmed milk and butter. Mash the potatoes. Stir the sautéed onion into the mashed potatoes. The filling is ready! Divide the dough into small pieces and roll them into rounds about 1/2 inch (1 cm) thick. Spoon the filling onto each round and pinch up the edges decoratively. Arrange the perepechi on a parchment-lined baking sheet. Crack the eggs into a bowl, beat them, add the sour cream, and mix. Brush the pastries with the sour cream-egg wash. Bake in an oven preheated to 400°F (200°C) until golden brown (about 20 minutes). The perepechi are ready to taste. Enjoy!
