- Press the cottage cheese through a sieve or blend it into a paste (a meat grinder works too). 2. Add the sugar, egg, and a pinch of salt to the cheese. Beat well until smooth. 3. Add the semolina and butter. Mix. 4. Add the flour (sifting it is best) and mix. Put the finished dough in a bag and refrigerate for 1 hour. 5. Wash the strawberries and remove the stems. Pat them dry. 6. Dust the chilled dough with flour, roll it into a log, and cut it into 10–12 pieces. Dip each piece in flour and flatten it into a disk. Set a strawberry on each disk and, gently pressing the dough around the berry, shape it into a dumpling ball. Roll them in flour so they don't stick to the plate or counter. 7. Bring water to a boil and add a little salt. Gently lower the dumplings into the water, let it return to a boil, and carefully nudge them loose if they stick to the bottom. Once they float, simmer for 2–3 minutes at a gentle boil — a hard boil can tear the dough apart. 8. Get your breadcrumbs, shredded coconut, or crushed cookies ready for coating the dumplings. 9. Roll the hot dumplings in the crumbs — it looks nicer that way. Garnish with mint and whipped cream. Serve with sour cream, ice cream, honey, or jam. Enjoy!
