Cooking method
1. Peel the zucchini and seeds, grind to a puree-like state with a meat grinder.
2. Oranges and lemons are scalded with boiling water, cut into slices (it is not necessary to clean the skin) and also pass through a meat grinder.
3. Mix citrus puree with zucchini, pour sugar, mix. We leave it until the sugar crystals completely dissolve (this is about one and a half to two hours).
4. We send the mass to the fire, bring it to a boil and cook for 15 minutes on very low heat, stirring constantly (do not ignore stirring, since the mass is quite thick and there is a chance of burning).
5. Let the jam cool down, then repeat the same procedure two more times. I check the jam for readiness in this way: I put the saucer in the freezer for 15 minutes, then I drip jam on it: if the drop spreads, you still need to cook, and if it freezes, the jam is ready.
6. We put hot jam in sterile jars and seal them tightly.
7. We send the jam for storage in the cold.
