Gorloder with Horseradish and Garlic for the Winter

    How do you make gorloder with horseradish? First, get all the components ready. You can use any variety of tomato for the sauce. You can increase or decrease the amount of hot chili pepper to taste, or leave it out of the recipe entirely.

    Wash the soil off the horseradish root and peel it with a sharp, thin knife. Peel the garlic. Wash the tomatoes, hot pepper, horseradish root, and garlic in clean water. Cut large tomatoes in half and remove the stem ends.

    Wash the jars thoroughly and sterilize them by whatever method is convenient — in the microwave, the oven, or a water bath. I find it convenient to sterilize in the oven. Sterilize the lids in the oven too, or boil them in water (depending on which lids you use).

    Next, grind all the components. You can do this two ways: with a meat grinder or a blender. This time I used a blender. Put the tomatoes in the blender, cutting the large halves into two more pieces for convenience.

    Cut the horseradish root into small pieces and add it to the tomatoes.

    Next comes the garlic — cut large cloves into two or four pieces and leave small ones whole. Add the cloves to the tomatoes and horseradish.

    Cut the hot pepper pods in half and remove the seeds (partly), the stalk, and the core. Cut the pepper into small pieces and add it to the blender.

    Blend everything until smooth. Add the salt and sugar to the tomato mixture.

    Mix everything and let it stand for about 15 minutes, during which the salt and sugar crystals should fully dissolve. Stir the gorloder once more.

    Pour the sauce into the cooled jars, seal them with lids, and refrigerate for storage.

  • Since the sauce isn't heat-treated, it's very important to store it in the refrigerator, deep on the shelf near the back wall. I don't always manage to keep gorloder made this way for long. I usually pour the finished sauce into food bags in small portions and put it in the freezer — that way the relish keeps for a very long time. The second way to keep the sauce longer is to add aspirin at a rate of one tablet per liter of gorloder. The third option for long-term storage is heat treatment: bring the sauce to a boil in a pot and simmer it over low heat for about 20 minutes, then pour the hot gorloder into hot sterile jars and seal them. Of course, this method reduces the heat and changes the flavor a little, but it keeps the relish for a very long time. Enjoy!
