Tatar-Style Kystyby (Stuffed Flatbreads)

Put yesterday's mashed potatoes to good use — incredibly delicious! Tatar cuisine has so many interesting dishes. Kystyby are wonderfully tasty flatbreads made from unleavened dough. The traditional filling is mashed potatoes, which is very budget-friendly. I personally love this dish: you can eat it with soup or on its own as a full dinner. And it's a joy to make — the dough is forgiving.

  • To make the dough, grab a deep bowl. Sift the flour. Pour in the warm milk and melted butter, add the salt and sugar, and beat in the egg. Stir the ingredients with a spatula, then knead by hand. The dough is ready! For the filling, you can use "yesterday's" mashed potatoes — or make it fresh: boil the potatoes, add milk, and mash. Stir butter and onion (sautéed ahead of time in vegetable oil) into the mash, and salt to taste. Now divide the dough into small balls and roll each one out thin. Cook them in a dry skillet. Brush each flatbread with melted butter, spoon the filling onto one half, and fold the other half over. Enjoy — and make them again!
